4th of July
To bring in the patriotic theme, we hung red, white & blue lanterns and some Martha Stewart
Patriotic Stars from the table umbrellas.  
Now here is our pick for a very easy dessert that will have all of your guests licking their
fingers and asking for more!  

Could not be any easier to prepare.  All you need are bamboo skewers, frozen cream puffs,
strawberries, blueberries and of course some chocolate sauce to drizzle when ready to
serve.  This keeps our red, white & blue theme going without much effort.

Nothing says Summer like Watermelon.....
Have you ever tried making a watermelon salad?  Well now is the perfect time to try it!

Our Essential Summer Salad is light and refrshingly amazing.  A little sweet & salty with a hint of mint.

Why not try it out this weekend and give your tastebuds a thrill......

Ingredients:

1 small to medium Watermelon cut into 11/2 inch chunks
1 1/4 cups of pitted Calamata Olives
1 7 oz package Feta Cheese(will need to be cubed)
1 cup coarsely chopped mint leaves
1/3 cup Balsamic Glaze
Balsamic vinegar glaze can be found in the vinegar section at many supermarkets (ie; Trader Joes) If unavailable, boil 3/4 cup reduced to 3
tablespoons, 6 to 7 minutes

Christopher & Banks held their annual Spring Fashion Show 2014 at Montgomery Village Village Shopping Center in
Santa Rosa, CA,  It was a wonderful afternoon!  There was such a buzz in the back room as all the ladies were
getting into their outfits, putting on jewelry, scarves, etc. The store manager, Laura Lee was giving out instructions to
her models and everyone was so excited.  There was a full house out in the front of the store with everyone anxiously
waiting for the fashion show to start.

It's Summertime and our resident chef is in the mood for homemade ice cream sandwiches, but he is going to combine it
with his favorite dessert, lemon bars.......which then will give us Lemon Cookie Ice Cream Sandwiches.  We gave him 2
thumbs up and below is the recipe.

                                                  LEMON COOKIE ICE CREAM SANDWICHES

INGREDIENTS:

  • 1/2 CUP BUTTER SOFTENED
  • 3/4 CUP SUGAR
  • 2 TBSP FINELY SHREDDED LEMON PEEL
  • 1/2 TSP BAKING SODA
  • 1/2 TSP CREAM OF TARTAR
  • 1/4 TSP SALT
  • 1 EGG
  • 1/2 TSP VANILLA
  • 1 1/2 CUPS ALL PURPOSE FLOUR
  • 1 3/4 QUARTS VANILLA ICE CREAM
  • 10 LEMON CURD (ABOUT 1 CUP)


INSTRUCTIONS:  
Preheat oven to 350 degrees F.
In a large bowl beat the butter with an electric mixer on medium speed for 30 seconds
Add sugar, 1 tbsp of the lemon peel, baking soda, cream of tartar and salt
Beat until combined, beat in egg and vanilla, beat in as much of the flour as you can with the mixer
Stir in remaining flour.  Put half of the dough into a foil lined 9x9x2 inch baking pan.
Bake 12 minutes
Using foil ends, lift cookie from pan and cool on a wire rack
Repeat the above with the other half of the dough
Soften Ice Cream
Fold in Lemon Curd and remaining lemon peel
Line the same baking pan with plastic wrap
Place one baked cookie in baking pan
Spread ice cream mixture evenly over cookie
Place the second baked cookie on top of ice cream
Cover and Freeze for 4 hours
Makes 20 servings
